Baked Clams on a Half Shell

Baked Clams

Oceano - Located on the southwest portion of the Discovery Route, the classic and historic beach town of Oceano is known for majestic dunes, sandy beaches and fertile farms. Drive on the beach and enjoy a diversity of recreation. Clam dinners are a local tradition in this authentic little town.


From The Angello family recipe of the 1940′s

10 clams chopped or 3.5 lb 3oz can chopped sea clams, drained (save some juice for moisture)
1 large white or yellow onion, chopped
1-2 bell peppers, chopped
1 lb jack cheese, shredded
1/2 -1 lb bacon
1 box saltine crackers (med 2 sleeves of crackers), crushed
1/2 quart Half/Half cream
1 cube butter
4 fresh lime or lemon juiced
1or 2 fresh jalapeno peppers deseeded (optional)
pepper to taste'

Semi-cook bacon. Chop some into small pieces for mixture, set aside a few strips to cut and lay across top of mixture when cooking.

Drain clams save some juice to add to mixture for moisture.

Mix all ingredients, except bacon strips used as topping. Use enough crackers to take up moisture so as not too moist. Add clam juice to mixture for flavor.

Spray non-stick cooking spray inside clam shell or seashell baking dish or rub butter inside dishes. You can also use casserole dish. Fill dish with mixture, top with bacon and a little cheese.

Bake 30 minutes at 325-350 degrees.
