Ryan Swarthout leads the team at Roberts Restaurant as the executive chef. Chef Ryan brings with him many years of hospitality experience. Chef Ryan attended the renowned California Culinary Academy of San Francisco.
After graduation he set out to gain as much experience as possible and worked with acclaimed chefs such as Mark Miller of Coyote Café, Alan Wong of Alan Wong's and Shawn McClain of Green Zebra. Chef Ryan has also spent extensive time living and working in Europe. While there, he refined his knowledge of European cuisine and wine while attended intimate cooking classes that focused on regional specialties. Chef Ryan draws from these experiences and the fresh local ingredients available in Paso Robles, to create his menus featuring a fresh approach to Classic American cuisine. After working many years with Paso Robles wineries, Ryan has developed a good sense for pairing food and wine seamlessly together while enhancing the flavors of both.
