Meet the Talented Chefs Behind Estrella's Outstanding Dishes
Executive Chef Ryan Swarthout and Chef de Cuisine Travis Borba serve it up
Ryan Swarthout, the executive chef of Robert's and Estrella restaurants, brings with him many years of hospitality experience. Ryan attended the renowned California Culinary Academy of San Francisco. After graduation he set out to gain as much experience as possible and worked with acclaimed chefs such as Mark Miller of Coyote Café, Alan Wong of Alan Wong's and Shawn McClain of Green Zebra. Ryan has also spent extensive time living and working in Europe. While there, he refined his knowledge of European cuisine and wine while attended intimate cooking classes that focused on regional specialties. After working many years with Paso Robles wineries, Ryan has developed a good sense for pairing food and wine seamlessly together while enhancing the flavors of both. Ryan draws from these experiences and the fresh local ingredients available in Paso Robles, to create his menu at Robert's featuring a fresh approach to Classic American cuisine. After opening Robert's restaurant Ryan has taken on a new adventure of opening his second restaurant Estrella. Ryan has combined Spanish, Mexican, Caribbean and South American cuisines to create the menu at Estrella, which he is calling Latin Rivera cuisine.
