The Cypher Tasting Lounge evolved out of a love of great wine, food and bringing people together to enjoy them along with great conversation and fun. Wine flights include SAM’s seasonally inspired culinary creations to enhance your tasting experience. We invite you to relax in our lounge or garden and look forward to sharing a wine-inspired culinary adventure with you.

Cypher Tasting Lounge at the Historic Train Depot
The tasting lounge is located just 3 blocks South of the square in downtown Paso at the historic train depot. Built in 1880, the Depot is an architectural gem with original wood floors, windows and loaded with charm. SAM designed a welcoming atmosphere at Cypher for guests to settle in, relax, and enjoy life in the “SLO Lane” with great wines and friendly, authentic hospitality.

Coming Soon – Cypher Winery at Arbor Road!
In early 2022 Cypher will be breaking ground on a new winery and tasting lounge at SAM’s home property just off of 46 West in the Westside hills of Paso. We can’t wait to host Enigma members and guests at this very special place. Here we will enjoy wine tasting with bocce and food pairings from the wood-fired pizza oven amidst the 300-year-old oak trees. At the Arbor Road winery & tasting room, you will be invited to join SAM on a true farm-to-table experience. We will be offering tours of the herb, vegetable, and lavender gardens, olive and fruit orchards, and estate vineyard.

ZinPunk is a blend that balances elegance and power on the edge of sword. Like the warrior she embodies, she is a bold representation of strength and beauty with just the right amount of jam, spice, earthy tannin, acid, and more jam! Eclectic Red Blend
Theory Z (a Kitsune) shape-shifting our traditional Theory 3 GSM into a ZSM! Big brambly nose followed by waves of cherry, plum, and spice – this is a beautiful blend showcasing Zin’s ability to stand head to head with Grenache. Zin’s elegant fruit balances the dark berry, anise, and spice of Mourvedre and big jammy Syrah. Watch out, Theory Z might slash your current favorite a notch down on your list of top wines

2017 FIFTH ELEMENT
Library Selection
A Mourvedre leading Rhone blend with big fruit, structure and spice. The nose has aromatics of blackberry, dark cherry, anise, leather, black pepper, followed by blueberry, tobacco and spice with a long cocoa vanilla finish. A perfect example of why we love cracking the code to exceptional wines with blends.

2021 ELEMENTAL
CABERNET SAUVIGNON
Gentle use of new oak lets the true nature of the fruit and terroir shine through while the oak plays a supporting role. Big aromatics lead to black cherry, plum, cedar, sage, and a pinch of green peppercorn. 7% Petit Verdot contributes deep blackberry fruit with violet, gorgeous structure, and rich tannins.

Proprietor Susan A. Mahler (AKA SAM) is focused on creating fruit-forward wines that elegantly express varietal and the terroir from which they are grown. As a devoted gardener and cooking enthusiast, SAM loves taking people on a food and wine journey inspired by the season and garden. “My goal is to make people feel relaxed and inspired by their experience at Cypher, to surprise them with some interesting and unexpected pairings, and have them remember their experience with a renewed connection and love for the great things we harvest from the Earth. “Sharing my creations for the enjoyment of friends, family, members, and visitors is the pinnacle of my journey.”

ZinPunk is the force that keeps everything together for the ultimate sensory experience at Cypher. She is driven by a fierce love of fun, perfection and of course food & wine. If you are lucky, one day you may catch a rare glimpse of ZinPunk performing her extreme Three Point Exploding Cork technique (3PECT). 3PECT is a virtually impossible technique invented and perfected by ZinPunk inspired by her dedication to the art of Kendo and extreme hospitality. ZinPunk’s mother was a legendary importer/exporter of saki and wine seasonally moving the family between Oak Park, IL and Koganei, Japan.

Hailing from the Nada Ward of Kobe, Japan, Theory Z - code name Zenko - is a visionary and problem solver. The trickster behind her namesake Theory Z blend, she keeps us all on our toes pushing the limits of imagination in growing, making and blending at Cypher.

Theory ZGM & Covert Ops

Slayer is a meticulous defender of perfection, guarding the Cypher barrels from any attacks by Oni (demons)…oxidation, Susuwatari, Brettanomyces, VA. Growing up in a sake brewing family in the Fushimi Sake District of Kyoto, Japan, Slayer learned the rewards of patience and meticulousness. After graduating University of Tsukuba, Slayer jumped into wine full time with her Kendo teammates Theory Z and ZinPunk to help run Cypher.
